Steffi Knowles-Dellner

Fancy an update on the quintessential Christmas morning Smoked Salmon and Scrambled Eggs? We have just the thing for you.

Swedish food stylist and cookery writer Steffi Knowles-Dellner shows us her Scandi take on Christmas morning breakfast with this Buckwheat, Chive and Lemon Pancakes recipe – pair with smoked salmon and crème fraîche and this one is certain to become a new classic.

Steffi loves this wintery recipe, perhaps an alternative to Christmas dessert : buttermilk cardamom pannacotta with spiced fruit compote

Olia Hercules

With a new book out now : Kaukasis and Mamushka available on Amazon

Everybody knows that turkey is the worst part of Christmas dinner. It’s really just a traditional formality made bearable when surrounded by delicious stuffing, cranberry sauce and roast potatoes.
However, with Olia Hercules’ Garlicky Spatchcock Poussin recipe the meat on your plate is set to become your favourite part of the meal.
