Branston Pickle – LeftOvers
Food Stylist and Recipe Creation: Steffi Knowles-Dellner

Steffi was not only the food stylist for the shoot, she was also tasked with creating original recipes incorporating Branston Pickle. Steffi also had to use the left over food from the festive season in her recipes. She devised some rather creative recipes that are not the same old boring turkey sandwiches one eats on Boxing Day.  The shoot took place in Joff Lee’s studio in Clerkenwell.

Home Economist and food styling

January 27th, 2016

professional food styling, home economist, Style Department

What’s a Home Economist?

Since time immemorial the term “home economics” has been synonymous with cooking and food. While this fact rings true, there is more to home economics than just food and culinary art. It’s a combination of a plethora of aspects that interrelate to form one course study. These elements include finance, parenting skills, cooking, nutrition, and science. Home economists learn the relationships between these aspects and the management of resources.

The essence of a home economist learning all these aspects and their interrelation is not just to make them professionals in the field, but to also provide them valuable and necessary insight about the profession. This, in turn, helps them to:

•    Comprehend modern eating patterns and the role the consumer plays in affecting them

•    Importance of good health and overall nutrition to the body

•    Choose the best types of foods to be eaten and how food behaves under different circumstances.

•    Plan on the best ways to cook healthy, nutritious and economical meals, and

•    Find out what’s precisely contained in foods that we consume daily

What Do Home Economist Do?

A home economist may choose to be a generalist, or better, specialise in a particular subject area of their choice. Home economists can, amongst all other things, involve themselves with teaching and educating the community, informing, advising the government and the general industry on how to make improvements and informed choices of their lifestyles.  Some aspects of food styling require a more specialised and trained stylist, for example, working with ice creams, coffees and other more complex projects, a home economist is called for due to their knowledge and experience in particular fields.

Home economists are, in reality, competent in many areas of culinary, including food styling. They are also involved with designing and evaluation of products, design and planning of meals, offering assistance on matters health, teaching independent skills to all and sundry and by extension, they make good educationists. Often they’re mistaken for food stylists – well; that’s because they are. They cook, arrange food and sometimes special effects for stills and video shoots together with props masters and special effects designers.

Besides law and advocacy, home economists make good restaurant managers, hospital and school administrators thanks to their nutrition, menu planning and food designing skills. (Family and Consumer Sciences is the modern name for home economics).

The Exceptional Culinary Art That Is Food Styling

August 14th, 2014

05.chocolate potsA stunningly beautiful picture of  hot-fudge chocolate pots, strawberry ice cream with a cherry on top, served in a frosted glass; all are bound to whet your appetite. They can stimulate your salivary glands to the point where even your stomach starts to rumble. That is the exquisiteness of food styling and photography; to make you yearn for a bite when flipping through that food magazine. Food styling is the culinary art of arranging food in order to look fresh and overpoweringly tasty.

What does a Food Stylist do? Is their work valuable?

The main purpose of food stylists is to ensure that the food, in the finished photograph, looks stunningly attractive and very easy on the eye. The technique of making meals look their very best however is not easy. It takes a creative mind and alluring artful designs to make the food appear photogenic in a film, video or magazine. The food stylist is a culinary expert who can artfully and carefully enhance, for example, pancake syrup making it look really tasty or making drinks visually appealing.

The difference between the way a home cook or chef presents food, and the way the food stylist presents food is the time and effort a stylist takes to craft and cautiously arrange the food. Creative and sparkling food arrangements are an art that requires culinary training. Food stylists are mostly culinary trained as professional chefs in a cookery school. Some also have a rich background in home economics. So, in essence, a trained home economist can be a stylist.

However, in order for creative stylists to gain work experience, skills in the art of food styling, and entirely envision the finished photograph to style the food accordingly, they must first work as assistants to other food stylists and home economists. They also need to have a wide knowledge in cooking techniques and nutrition. The essentially a year of food styling experience, with credible certifications and seminar courses, can easily earn you a job.

Diverse Types and Importance’s of Food Styling

There are different ways food can be styled to appeal say, to feature films, TV commercials and magazines. In reality, food  and drinks are generally styled to be photographed and appropriately used for menu cards, advertisements in newspapers, restaurants or even posters. Diverse types of Food styling: editorial, advertising, packaging and labelling, feature films and TV commercials.

The importance of matching the right food stylist to the right projects is finesse. Use a stylist who is exceptionally creative and knowledgeable on how to translate the perception, appeal, aroma and taste of the styled dish, to a two-dimensional photograph or video. That way you will achieve utmost excellence in your photography and video projects.

Sue Townsend perfect baking for Ford Advertising

November 29th, 2013

Sue was commissioned to work on the European campaign for promoting the new Ford Torneo. The brief involved a creative input and logistics, as the cakes had to be  high-end, real and at the same time light for the models to hold them up effortless during long hours of shooting.  The cakes had to hold up beautifully against  the hot studio lights. Not as easy as it seems! Lots of cakes on set, the perfect baking  by Sue and it all ran smoothly.
