Steffi was not only the food stylist for the shoot, she was also tasked with creating original recipes incorporating Branston Pickle. She devised some rather creative recipes that are not the same old boring turkey sandwiches one eats on Boxing Day.  The shoot took place in Joff Lee’s studio in Clerkenwell.

Olia Hercules, food stylist _ new work

September 30th, 2014

Olia Hercules, FoodStylist, Style Department

Food stylist Olia Hercules and food photographer Joakim Blockstrom have been working together for a while and decided to do a test together. Joakim came up with the snail concept, and Olia came up with the Jamon foot vibe. They both wanted to do something visceral and delicious at the same time.

Olia sourced the edible snails from Helen Howard who has a farm in Kent. Very sensitive, Olia had said sorry to each of one of them before they got blanched.

Joakim read somewhere that snails love grapefruit;  Olia came up with the idea of cooking the snails with grapefruit garlic butter. Then they discovered that the snails look quite pretty out of their shells too so I sauteed some with bits of jamon, lemon zest, parsley and sourdough crumbs for texture.

The idea of the jamon shots happened after Olia went to visit her friend’s jamon bar called Tozino in Maltby St.; Tozino translates as the superior part of fat on a jamon leg . He kindly gave Olia a bone from his most expensive jamon reserva. He advised Olia to put the hooves into the stock; she can use it as the most flavoursome stirring spoon.

Olia came up with the salads by chance,  after looking at ‘eat the seasons’ website. Olia lives near Green Lanes and weirdly almost every Turkish shop sells cobnuts which are fresh, creamy and tender – perfect with the figs.

That was one of Olia’s favourite and creative test shoots to date. Olia loves breaking  the mould and so does Joakim; she feels quite lucky to have been working  with him, testing and pushing her creativity.

recipe development and writing

September 18th, 2014

Angela Boggiano, Food Stylist, Style Department, Recipe Development

Ensuring that a recipe work is essential to the success of a food business. A good recipe can make a brand stand out. Food recipe development is the process of turning an idea food related into a finished product or dish done by trained food stylist or home economist. The recipe might be required for a restaurant menu, cookbook, product intended for sale or special event. Recipes are guidelines that allow consumers to replicate them on their own. Good recipes are ones that allow readers to imagine the writer is standing beside them and guiding them through the process.

Recipe Writing through the Years

Women have passed down recipes to younger generations by showing them how to prepare food. It was only when literacy became widespread over the past 200 years that’s how recipe writing began. But the earliest examples were hard to follow. They were not exact, and some had the ingredients, but not the amount required for the recipe. The recipes were meant to be a reminder as the mothers wrote them during the cooking process. During the turn of the 20th century, scientific progress has changed a lot of aspects of daily life, and this was when recipes became more formal. Magazines played a vital part in introducing the precise recipe format as they printed recipes branded with their logo.
Nowadays, recipe development and writing play an important part as the public at large has an insatiable  appetite to know all things food related.
The recipes needs to be readable, understood and infallible.

Balancing Customer Needs and Brand Guidelines

Recipe development is an arduous task that takes a lot of time and effort. One needs to create the right balance of considering the needs of the client as well as the guidelines of the brand. The recipe developer conceptualises the idea  and creates products that reflect the brand’s culinary point of view. One will also create, write, test, and introduce a new product. The developer is also  in charge of training on the preparation and presentation of the method in the commercial arena.

To become a recipe developer, you need to have formal culinary training via a technical college, college that specialises in culinary arts, or a specialised culinary art school. Food stylists, home economists, food journalists and writers can also venture into recipe development and make a living through recipe writing.
It is important to hire a professional to develop and test the recipes. They know the proper way to do the job and come up with new recipes that will make businesses stand out. A successful recipe is creative, easy to reproduce and yet brings something new to the market. It can be made by common ingredients, but the outcome can be sumptuous. A professional recipe development provider delivers quality recipes that will be loved by the consumers.

We can help your business with recipe development and writing. contact us : Style Department

The Exceptional Culinary Art That Is Food Styling

August 14th, 2014

05.chocolate potsA stunningly beautiful picture of  hot-fudge chocolate pots, strawberry ice cream with a cherry on top, served in a frosted glass; all are bound to whet your appetite. They can stimulate your salivary glands to the point where even your stomach starts to rumble. That is the exquisiteness of food styling and photography; to make you yearn for a bite when flipping through that food magazine. Food styling is the culinary art of arranging food in order to look fresh and overpoweringly tasty.

What does a Food Stylist do? Is their work valuable?

The main purpose of food stylists is to ensure that the food, in the finished photograph, looks stunningly attractive and very easy on the eye. The technique of making meals look their very best however is not easy. It takes a creative mind and alluring artful designs to make the food appear photogenic in a film, video or magazine. The food stylist is a culinary expert who can artfully and carefully enhance, for example, pancake syrup making it look really tasty or making drinks visually appealing.

The difference between the way a home cook or chef presents food, and the way the food stylist presents food is the time and effort a stylist takes to craft and cautiously arrange the food. Creative and sparkling food arrangements are an art that requires culinary training. Food stylists are mostly culinary trained as professional chefs in a cookery school. Some also have a rich background in home economics. So, in essence, a trained home economist can be a stylist.

However, in order for creative stylists to gain work experience, skills in the art of food styling, and entirely envision the finished photograph to style the food accordingly, they must first work as assistants to other food stylists and home economists. They also need to have a wide knowledge in cooking techniques and nutrition. The essentially a year of food styling experience, with credible certifications and seminar courses, can easily earn you a job.

Diverse Types and Importance’s of Food Styling

There are different ways food can be styled to appeal say, to feature films, TV commercials and magazines. In reality, food  and drinks are generally styled to be photographed and appropriately used for menu cards, advertisements in newspapers, restaurants or even posters. Diverse types of Food styling: editorial, advertising, packaging and labelling, feature films and TV commercials.

The importance of matching the right food stylist to the right projects is finesse. Use a stylist who is exceptionally creative and knowledgeable on how to translate the perception, appeal, aroma and taste of the styled dish, to a two-dimensional photograph or video. That way you will achieve utmost excellence in your photography and video projects.

November 29th, 2013

Sue was commissioned to work on the European campaign for promoting the new Ford Torneo. The brief involved a creative input and logistics, as the cakes had to be  high-end, real and at the same time light for the models to hold them up effortless during long hours of shooting.  The cakes had to hold up beautifully against  the hot studio lights. Not as easy as it seems! Lots of cakes on set, the perfect baking  by Sue and it all ran smoothly.
